Burnout Paradise is one that isn't all that difficult but it is a bit time consuming (since you need to find all the events and the map isn't small) although it also has the advantage that if you own all the DLC it's also a trophy goldmine (there's 98 available in total). I mean to get the platinum all you need to drive in are the basic cars (motorcycles don't count towards the platinum) and compete in a few online events, you don't even need the Elite license (although you do need a webcam for one trophy).
LittleBigPlanet isn't terribly hard either as long as you can make some decent levels and follow guides to find all the items in the levels (well that and complete levels without dying) and apparently Terminator Salvation as long as you beat it on Hard is super easy as one play through gets you the platinum.
